Where it comes from
This white wine originates in the heart of Bolgheri, Tuscany. The estate's vineyards grow in a landscape where vines coexist with centuries-old olive trees, in full harmony with the surrounding environment. The vineyard management follows strict organic practices, with a handcrafted approach aimed at protecting the local ecosystem. The wine's name is a tribute to nature: it refers to the Helleborus flower, part of the Ranunculaceae family and also known as the Christmas Rose for its characteristic blooming in December.
How it is produced
Production begins with the manual harvesting of the grape bunches, which are carefully destemmed and selected before pressing. Fermentation takes place in stainless steel tanks to preserve the fruit's aromatic purity. Ageing involves four months in steel, followed by a further two months of maturation in the bottle. Thanks to its vibrancy, Elleboro is ideal as an aperitif and pairs perfectly with light starters and seafood dishes based on lean fish.

The Podere, at 196 of the Strada Provinciale Bolgherese, a few kilometers from the famous Viale dei Cipressi and Castagneto Carducci in the province of Livorno, Tuscany, has been the vacation home of the family of Silvia Cirri, the majority shareholder and CEO of the company, since the 1980s. It is located in the center of a 3.8-hectare basin with 800 olive trees, some of which are centuries-old, of the typically Tuscan varieties Leccino, Frantoio and Moraiolo, among whose rows in 2015 0.2 hectares of Cabernet Franc were planted.
The production of the oil, started by Silvia's mother, has been conducted since the very beginning using organic farming and the Extra Virgin Olive Oil Organic IGP Toscano now also boasts the new territorial denomination Bolgheri. Read more
