Grapus Cava Brut Nature by Covides is an organic and vegan sparkling wine made from a blend of native grapes Macabeo, Parellada and Xarel-lo. Produced using the Traditional Method, it stands out for its golden straw colour and a fine, persistent perlage. On the nose, it weaves together floral aromas and notes of honey, which precede a dry, mineral and rounded palate with remarkable persistence.

Where it comes from

This sparkling wine originates in Catalonia, at the heart of the Cava region. Production is rooted in Sant Sadurní d’Anoia, a terroir that imparts a pronounced mineral profile and lively freshness to the grapes. The enhancement of local grape varieties results in a regular and balanced effervescence, capable of reflecting the identity of the Iberian landscape.

How it is produced

Production follows the Traditional Method, with slow ageing to achieve perfect effervescence. The absence of sugar dosage enhances the wine’s absolute purity and its incisive dryness. At the beginning of the 1960s, the winegrowers of the Penedès region didn’t have many options to sell the grape harvest, for them the best way of trading was through the cooperatives.

The target of Covides was the creation of a cooperative that would give way to the production and that would add value to the grape harvest through the elaboration and the trading of the wine.

The Cooperative’s formula not only allowed to give way to the production of grapes but made it’s members automatically responsible for its management.

In just one year, the Covides Cooperative became a social reality.
