Privilegio by Feudi di San Gregorio is a sweet white wine made from Fiano grapes. To the eye, it reveals a crystalline golden yellow colour, while on the nose it offers clear aromas of dried apricot and small white flowers. On the palate, the sip is silky and smooth, balanced by a vibrant acidity and a pleasant mineral note. The long finish recalls candied citrus fruits, cinnamon and white peach peel, making it ideal for pairing with creamy desserts and blue cheeses.
Where it comes from
This passito is produced in Campania, within the Irpinia area, a region of great importance for the promotion of native grape varieties. Feudi di San Gregorio expertly interprets the rich soil and favourable climate of this region. The Irpinian pedoclimatic conditions give the Fiano a fresh and well-defined character. This territorial peculiarity clearly emerges during tasting, where the savoury tension supports the natural sweetness in a true expression of the terroir.
How it is produced
The production technique is based on a careful drying process: the grape bunches rest for eight weeks in a ventilated room to encourage the concentration of sugars. Afterwards, the wine matures for between six and eight months in small barrels, acquiring remarkable structural complexity. A further twelve months of ageing harmoniously integrates the sweet component with the fresh mineral notes. This meticulous care ensures the wine has excellent ageing potential, allowing it to evolve beautifully over time.
