Where it comes from
The Champagne originates from the lieu-dit Largillier, a precious plot in the commune of Ville-sur-Arce. Here, distinctive limestone soils are found, a fundamental geological element that gives the wine its profound mineral character. The choice to highlight a single vineyard allows the Pinot Noir to faithfully translate the terroir into a vertical and pure sip. The organic and sustainable viticultural approach promotes an exemplary balance between the pronounced structural component and a clear freshness.
How it is produced
Production begins with a selective harvest to pick the grapes at optimal ripeness. Vinification takes place exclusively in steel tanks, ensuring maximum expressive clarity before completing malolactic fermentation. The long ageing on fine lees, inspired by the Burgundian style, imparts complexity and volume. The subsequent prise de mousse, typical of the Traditional Method, concludes with a very light dosage, in true Extra Brut style, defining a taut, dry sip with remarkable ageing potential.
