From this winery
The Cherubini farm is located beyond the borders of eastern Franciacorta, immersed in a natural park in the Brescia hills, a few kilometers from the city center. In this valley there is a terroir of millenary formation with underground aquifers and rocks rich in limestone with a clayey substrate.

These soil characteristics combined with a constant light breeze and temperature variations give the wines minerality and acidity typical of the production terroir. Conventional agricultural tools such as weed killers or pesticides are not used.

The agricultural and winemaking philosophy is aimed at intervening as little as possible both in the vineyard and in the cellar, hence the choice to produce classic methods with Zero Dosage with only refinements in cement tanks that guarantee products with the maximum expression of the territory of origin.

Harvest takes place between the end of August and the beginning of September.
Wine making For the Pinot Noir I very lightly crush the whole grapes while for the Chardonnay classic soft crushing. I vinify the crus separately in concrete and blend after the spring rest, at which point the mousse starts.
Aging After ageing for a minimum of 60 months I proceed with disgorgement and use the same wine for topping up.
