Wine style
The Rimosso from Cantina della Volta is a dry sparkling red wine that expresses the lively soul of the Emilian territory. Crafted from Lambrusco di Sorbara grapes and re-fermented in the bottle, it presents a brilliant ruby colour with violet reflections and an inviting mousse. The aromatic profile is intense, characterised by notes of wild strawberry, redcurrant and fresh floral hints. On the palate, it is savoury and fruity, with a juicy and velvety sip and a pleasant persistence, ideal when paired with traditional cured meats, meats and cheeses.
Provenance
This wine originates in the heart of Emilia-Romagna, in the municipality of Bomporto. The area represents the excellence of the Lambrusco di Sorbara denomination. Production values an approach focused on freshness, enhancing the expressive purity of the Lambrusco di Sorbara.
Production method
Production involves manual harvesting of the grapes and cold maceration in the press. Alcoholic fermentation takes place in temperature-controlled steel vats. Subsequently, the wine undergoes natural re-fermentation in the bottle, ageing on its own lees for at least five months. This technique, which keeps the yeast inside the bottle, gives the wine remarkable complexity, accentuating the notes of black cherry and its characteristic vinous nature.

The company is based in the original building of the Cantina Bellei, built by Christian’s great-grandfather on the banks of the Naviglio di Bomporto canal, near the 18th-century dock, where boats would perform la volta (‘the turnaround’) before setting sail once more to return back to the city of Modena. It is to this place, steeped in meaning and history, that we owe the symbol of the riverboat and the company name of the Cantina della Volta. Read more
