How it is produced
Bel Colle's production philosophy aims to enhance the integrity of the raw material. Fermentation takes place in stainless steel tanks at a controlled temperature, activated by indigenous yeasts. A slow post-fermentation maceration allows for the extraction of structure and colour, with racking taking place after about three weeks. Once malolactic fermentation is complete, the wine matures for twenty-four months in large oak barrels, finishing its journey with six months of final ageing.
