	Perlage Fine and persistent.
	Colour Straw yellow with greenish reflections.
	Bouquet The nose is elegant and enveloping, with sensations of slightly unripe pineapple, annurca apple and red fruits, such as blueberry and currant. Flowery notes from acacia to lime and jasmine. The bouquet is then enriched by pan brioche with light hints of orange peel.
	Flavour With great structure and freshness, it closes with a dry, tasty finish.

Soil composition	A unique soil, mainly limestone and rich in elements to give unique wines.

Harvest	By hand, with small crates the first and second decades of August.
Vinification	Cooling, soft pressing of the whole grapes to extract only the first must. First fermentation in thermo-conditioned steel tanks at 13-14 °C. 50% of the Chardonnay ferments in French oak barrels. Each parcel is vinified separately to enhance the uniqueness of its profile.
Ageing	At least 60 months. The second fermentation occurs in May following the harvest.
