Vinification |
Soft and increasing pressing of the grapes with must fractioning. Alcoholic fermentation is carried out in steel vats. |
Ageing |
Preparation of the cuvée in the spring following the harvest, with the addition of 20% Reserve wines wisely divided between Chardonnay and Pinot Nero. Second fermentation in the bottle and subsequent ageing in contact with its yeasts for at least 24 months, followed by a further two months after disgorging. |
Pairing |
This wine is recommended from aperitif to the whole meal and is an excellent accompaniment to some typical Franciacorta dishes, from casoncelli (stuffed ravioli) to lake fish (perch and char). It knows how to enhance, without ever overpowering, the flavours of dishes, whether they are rice and pasta-based rather than white meats or fresh and medium-aged cheeses. |
