Paolo Manzone Metodo Classico Blanc de Noir Brut
The pinot noir vineyards are located in the hills of Sinio at about 550 metres above sea level and the area falls within the 'Alta Langa' denomination. It is a gamble for Paolo to understand the potential of pinot noir, a traditional production of Burgundy, but cultivated in the Langa. The wine is fermented in the bottle between 24 and 36 months. We favour slightly more maturation in order to have good acidity and balance to obtain a good structure and body with great persistence.
