Vinification |
After careful selection in the vineyard, the grapes are harvested in small crates and left to dry for a short period in dry, well-ventilated rooms. After the necessary crushing, the must is left to macerate for 3-4 days with daily punching-down and controlled temperatures. Alcoholic fermentation occurs in steel tanks with skin contact at a controlled temperature. This favours the extraction of tannins, which ensure this wine's characteristic longevity, and polyphenolic substances. The mass then finishes its fermentation with malolactic fermentation. |
Ageing |
1 year part in French oak barrels and part in stainless steel tanks. |
Pairing |
The return of flavour corresponds to what was perceived on the nose. Its length and depth make it a necessary companion for grilled red meats and roasts of various types, medium-mature cheeses and sausages with several months of ageing behind them. Finally, it pairs with fish in several combinations. |
