Flavour

Its impact in the mouth fully conveys the peculiarities of the vines and the terroir of origin, with tannins that are initially rough but elegant and fine. Its alcohol structure is amalgamated with the acid and glyceric content, giving the wine great elegance and preservability.

Vinification After careful selection in the vineyard, the grapes are harvested in small crates and left to dry for a short period in dry, well-ventilated rooms. After the necessary crushing, the must is left to macerate for 3-4 days with daily punching-down and controlled temperatures. Alcoholic fermentation occurs in steel tanks with skin contact at a controlled temperature. This favours the extraction of tannins, which ensure this wine's characteristic longevity, and polyphenolic substances. The mass then finishes its fermentation with malolactic fermentation.
Ageing 1 year part in French oak barrels and part in stainless steel tanks.
