Vinification |
After rigorous care and selection in the vineyard and hand-picking into small crates, the grapes are left to dry in dry, well-ventilated rooms. Vinification and fermentation occur in stainless steel at a controlled temperature for about 30-35 days. |
Ageing |
The subsequent malolactic fermentation takes place naturally in 5-hl wooden barrels. Bâtonnage is carried out monthly. Once the cycle is complete, the wine stays in the tonneaux for 2 years. |
Pairing |
It is a perfect wine for food pairing and to be enjoyed by itself. A great wine to be enjoyed by itself to appreciate its features. However, it goes very well with aged cheeses and meat dishes made with prolonged cooking, loaded with gravies, as well as with traditional game meat. |
