Soil composition |
In the areas where the vineyards are cultivated we find soils of glacial origin, such as those in the Cavedine Valley, or volcanic, such as the basaltic soils of the Brentonico Plateau or the porphyry soils of the Cembra Valley. |
Vinification |
The grapes are rigorously selected and harvested by hand; this is followed by soft pressing with brief cold maceration in contact with the skins. White vinification is carried out at a controlled temperature. |
Ageing |
After a brief period of cold stabilisation, the wine is slowly mousse-formed in pressure-tight stainless steel containers, enhancing the finesse of the varietal aromas. |
Pairing |
Perfect as an aperitif, it goes well with grilled shellfish. |
