Climate |
The two areas enjoy the same sub-Mediterranean climate. The average annual temperature is around 12 degrees, while rainfall is around 700-800 mm, with two highs, in spring and autumn, and two lows, the most evident in summer and the other in winter. |
Soil composition |
In the Santa Margherita area, the vineyards are located on ancient conoids with brown, shallow, skeleton-rich soils with a clay loam matrix. In the Valle dei Laghi, on the other hand, there are medium-deep soils of alluvial origin, rich in skeleton with a loamy-loamy matrix. |
Harvest |
The grapes, harvested by hand when perfectly ripe, are taken to the cellar to be immediately crushed and destemmed. |
Vinification |
The must and skins are cooled at a low temperature and remain in contact with each other for about five hours to allow the best extraction of aromas. Processing of the grapes continues with soft pressing of the pulp and skins to obtain the must, which is fermented, part in barriques and part in stainless steel. |
Ageing |
After ageing on the lees (30% in French oak barriques and 70% in stainless steel), the wine is cold bottled and allowed to refine in the bottle before release. |

Salmon, mushroom risotto, spaghetti allo scoglio, baked seafood. |
