Immediate gentle pressing in order to obtain the light rose colour; start of fermentation at a temperature of 14-16°C for around 10/15 days Maturation In steel. |

Recommended with light hors d'oeuvres, fish, white meats, seafood risottos and Summer pastas. It also goes well with more important and tasty dishes thanks to its excellent acidity. |
