Harvest |
The rgapes are picked later, the garvest starts end of September/beginning of October: after a careful selection of single grapes of Corvina, Corvinone and Rondinella varieties, the bunches are laid, one layer high, on boxes, to preserve them in perfect condition. |
Vinification |
After a ligh cold maceration of 18-24 hours that takes plae inside the press, the grapes are gentle pressed. Decantin of the natural must 24-36 hours and subsequent slow feremtnation for about 30 days: half of the wine in barrique, the other in inert vessels. |
Ageing |
The wine is kept in contact on its lees for 3-6 months with frequent batonnage, until time for bottling. |
Pairing |
Well-strucutred and compelx rosé wine. It goes well with elaborate fish dishes, such as baked fish terrine, mackerel with Mediterranean aromas or marinated tuna tartare. Also ideal with summer barbecue. To try with pizza. |
