||Grapes are harvested by hand and successively de-stemmed and placed in special wine-making vats in stainless steel. There, the must remains to macerate in contact with the skins for at least 5 days, at controlled temperatures. Once the skins are separated from the must, the alcoholic fermentation process is completed in steel vats.
||After the malolatic process, the vine is placed in 300-liter durmast barrels where it is kept for nearly 2 years.
||Great with wild foul like quails, pheasant and duck, it is also a good match for delicate meals like goat, lamb with vegetables, veal and chicken with peppers.
