The grapes, after harvesting by hand, are quickly brought to the cellar, gently pressed at a maximum pressure BAR and immediately refrigerated to 16 °C. The high quality must obtained is prepared for fermentation with selected yeasts at a temperature of 16-18 °C for 15-18 days. |
