Weinbereitung	Traditional method. The grapes are crushed as soon as they arrive and put into pneumatic presses. Alcoholic fermentation takes place in temperature-controlled stainless steel vats at 18 °C. The wines then undergo a second fermentation in the bottle and a 15-month maturation ("Sur Latte") before being placed in gyro-palettes and disgorged.
