Vinification |
After the harvest, the grapes are subjected to a short, soft pressing, extracting only the free-run juice. This is followed by the inoculation of the alcoholic fermentation. At the end of fermentation, the wine is racked off and left to mature in steel tanks until spring. |
Affinage |
Racking is carried out in the late spring following the harvest to allow a quiet re-fermentation. The bottles remain on the lees for at least 40 months. This is followed by bottling and disgorgement. |
