Tra Donne Sole by Vite Colte is a dry white wine from Piedmont with a Denominazione di Origine Controllata, aged in steel, which fully expresses the elegance of Sauvignon Blanc. It presents with a straw-yellow colour enhanced by golden highlights and an intense nose, characterised by notes of elderflower, tomato leaf, asparagus, melon and grapefruit. On the palate, it is complex and silky, with pleasant hints of vanilla and apple strudel, closing on a taut finish with scents of mint and liquorice. Its distinct varietal profile makes it ideal for accompanying Mediterranean cuisine, sashimi and poultry, while also offering excellent ageing potential for up to five years.
Where it comes from
Produced in Piedmont by the Vite Colte winery, this wine is born on the hills of Monferrato. The vineyards are distinguished by their heterogeneous soils and low yields, essential factors for achieving a perfect balance in the glass. Agronomic management is based on staggered ripening: a first portion of grapes is harvested early to safeguard the vibrant acidity and fresh aromas of the grape variety. The second part is instead harvested late, ensuring a marked extractive richness and soft notes of tropical fruit in the must, bestowing great depth to the sip.
How it is produced
Cellar processing begins with a soft pressing to extract only the purest fraction of the must. Fermentation takes place at a controlled temperature, strictly protecting the primary aromas. Subsequently, the wine is aged for three months in steel. This is followed by a period of rest and low-temperature decantation, extending the time spent on its own lees for several months. This precise technique elevates the structure of the body and defines the stylistic purity, providing a clean and pleasantly vibrant finish.
