Where it comes from
This wine is born in the heart of the Valpolicella Classica, among the hills of the province of Verona that embrace the municipalities of Negrar, Fumane, Marano, Sant’Ambrogio and San Pietro in Cariano. The vines grow on limestone and clay hillside soils, characterised by good depth and excellent drainage capacity. These features are optimal for the development of the grapes, ensuring a well-defined aromatic profile. The interaction between clay and limestone gives the wine a balanced structure and a smooth tasting dynamic, enhancing the natural vocation of this historic Veronese district.
How it is produced
The production process begins with a manual harvest carried out between mid-September and early October, to pick the bunches at their ideal ripeness. In the winery, a gentle pressing follows to extract only the noblest fraction of the must. Fermentation takes place in temperature-controlled stainless steel tanks, a choice aimed at preserving the fragrance of the fruit intact. The process concludes with a period of maturation in steel, with no passage in wood, a choice that allows the wine to stabilise while maintaining a harmonious drinkability and a clear expressive freshness.
