What kind of wine it is
This Franciacorta with a dry and linear character is born from a blend of Chardonnay and Pinot Noir. The result of meticulous craftsmanship following the principles of the Traditional Method, it appears in the glass with a straw yellow hue and a fine, persistent perlage. The bouquet is clear, with distinct notes of grapefruit and pineapple giving way to an elegant finish of toasted hazelnut. On the palate, it is round and dry, perfectly balanced by a vibrant acidic streak.
Where it comes from
The roots of this sparkling wine lie in the heart of Franciacorta, in the area of Erbusco, where the characteristics of the soil provide an ideal environment for viticulture. The Vezzoli winery tends the vineyards with great attention to the microclimate, ensuring the grapes are harvested at their optimal ripeness. This careful management of the land results in a precise style and pronounced freshness, capable of supporting long periods of ageing on the lees.
How it is produced
The production process begins with the fermentation of the base wine in steel tanks, where it rests for about eight months. This is followed by a slow refermentation in the bottle, with ageing on the lees for over thirty-six months, allowing for the development of a broad aromatic complexity. In the final disgorgement stage, the topping up is carried out using only the same wine: a choice that defines the identity of the Pas Dosé, delivering a pure tasting experience that is true to its origins.

Managed since 1994 with oenologist Cesare Ferrari, the company produces 18,000 bottles annually. Balancing innovation and quality, it adopts a rigorous approach: at disgorgement, the topping up is done exclusively with the same wine, preserving the absolute purity of this zero dosage.
