Champagne Les Cotes Calcaires Nature by Tristan Hyest is an organic zero dosage wine of great precision. The blend combines Chardonnay, Pinot Meunier and Pinot Noir, enhanced through the rigorous use of the Traditional Method. In the glass, it displays a bright golden yellow hue, animated by a fine and persistent perlage. The aromatic profile is clear, characterised by distinct citrus notes that blend with hints of small exotic yellow fruits. On the palate, it is vibrant, rounded and complex, offering a delicate freshness that ensures a satisfying and very smooth sip.

Where it comes from

This wine is produced in Trélou-sur-Marne, in the heart of the Champagne region. The vines take root in limestone soils, a fundamental characteristic that gives the label its name and contributes tension and clarity to the taste. Vineyard work follows the principles of organic and sustainable agriculture, protecting the region's precious viticultural heritage. Tristan Hyest's approach is that of an independent and artisanal winemaker, dedicated to direct and careful management of every agricultural phase. How it is produced

The production of this sparkling wine follows the rules of the Traditional Method, enhanced by careful ageing. Part of the wine matures using the Solera method in partially filled barrels, a complex technique that enriches the blend with remarkable flavour layering and consistent stylistic continuity. The ageing on the lees, strictly without the addition of sugars after disgorgement, preserves a clear and defined character. At the table, its freshness makes it an ideal companion for the entire meal. It pairs perfectly with refined selections of shellfish and lean fish, and also enhances seafood starters and platters of delicate cheeses.

The values that have been passed me are thanks to my father, who decided to learn the work of the vine and wine, I received all these in addition to my champagne heritage.

From his experience in different vineyards, he had an indispensable expertise and understanding of the desire to preserve this heritage, which prompted me to graduate from the School of Viticulture.
