Cantina Tramin's Sauvignon is a still white wine with the Alto Adige Protected Designation of Origin (DOC), produced from Sauvignon Blanc grapes, which displays a bright yellow colour with delicate greenish highlights in the glass. On the nose, it is distinguished by an intense floral character, featuring bold notes of elderflower and nettle, alongside clear hints of gooseberry and green bell pepper. Vinified and aged in stainless steel, on the palate it offers an elegant structure, perfectly balancing a vibrant acidity with a distinct savoury component and a pleasant creamy sensation. Thanks to its medium body and long mineral finish, it harmoniously accompanies asparagus, oysters, delicate seafood dishes and spiced white meats.
Origin
The grapes are grown in the prestigious micro-zones of Tramin and Montagna, at altitudes between 350 and 600 metres. The vines take root in clay-limestone soils, enriched with gravel and porphyry components—geological characteristics that give the wine tension and a defined mineral identity. The area enjoys a mild climate, strongly influenced by temperature fluctuations: warm days with a clear Mediterranean influence alternate with nights constantly cooled by mountain winds. This unique microclimate ensures slow and steady ripening, allowing the bunches to develop an intense and precise varietal identity.
Production
Cantina Tramin practises rigorous sustainable viticulture, reducing intervention to follow the natural rhythms of the vineyard. Hand-harvesting in small crates protects the absolute integrity of the bunches, which undergo gentle pressing upon arrival at the winery. The must ferments in stainless steel tanks at a strictly controlled temperature, excluding malolactic fermentation to keep the original freshness of the fruit intact. The process concludes with targeted ageing in stainless steel, an essential step to preserve the crisp aromatic purity and provide a taut, persistent finish on the palate.
