On the nose, it reveals intense notes of tropical fruit, white flowers, chamomile and hints of pastry. Where it comes from
The grapes grow in the municipality of Crecchio, favoured by the climate of Abruzzo. The native Pecorino grape, historically present on the Adriatic side of the central Apennines, is known for its small golden bunches and thick skin. Vineyard management aims to enhance the territorial identity, allowing the fruit to express a clear aromatic profile. The soil composition gives the wine that gustatory tension which defines its style.
How it is produced
Production begins with cooling the grapes, followed by cryo-maceration on the skins to extract aromatic precursors. After destemming and gentle pressing, the must is clarified by static decantation. The first fermentation takes place in stainless steel tanks at a controlled temperature; afterwards, the wine is kept at very low temperatures before the prise de mousse in an autoclave. This process follows the Charmat method and is completed by a three-month maturation that defines its structure and elegance.
