Tenuta Ulisse Cerasuolo d’Abruzzo is a still rosé wine obtained from the delicate vinification of Montepulciano grapes. This oenological expression stands out for its bright cherry-pink colour, enriched by elegant aromas of strawberry and cherry intertwined with fine floral notes. On the palate, it offers a pleasant and fresh sip, supported by excellent acidity and a long aromatic persistence. Its clean and balanced profile makes it ideal for pairing with fish soups, seafood grills, white meats and fresh cheeses.
Where it comes from
This Cerasuolo d’Abruzzo is produced in Lanciano, in the province of Chieti, from vineyards cultivated on clay and limestone soils. The composition of the soil gives the wine a defined structure and a pleasant freshness on the palate. The Montepulciano vines are trained using the spurred cordon method, with strictly limited yields to ensure a high concentration of aromas. Careful management attentive to the peculiarities of the territory allows Tenuta Ulisse to offer a vibrant and distinctive interpretation of the grape variety, enhancing its character and intense personality.
How it is produced
After a meticulous manual harvest, the whole bunches are immediately brought to a low temperature in an exclusive cooling tunnel. This process initiates a skin cryomaceration, essential for extracting the primary aromatic compounds. This is followed by pressing in an inert environment and a slow temperature-controlled fermentation in thermoregulated tanks. The production process concludes with a three-month rest in steel tanks and subsequent maturation, steps that preserve the fruity liveliness and elegance of the rosé.
