What kind of wine it is
San Marzano Timo Vermentino is a still white wine made from Vermentino grapes, an authentic expression of the Salento region. On the nose, it reveals a delicate interplay of white flowers and citrus fruits, enhanced by clear notes of Mediterranean scrub. On the palate, it offers a dry sip with a pronounced maritime character, dominated by herbal hints of thyme and rosemary. The tasting combines pleasant freshness with a persistent minerality, making it ideal to pair with shellfish, seafood starters and cheeses, as well as being suitable for a vegan diet.
Where it comes from
The vineyards are located in Salento, in the Brindisi area, at an altitude of about one hundred metres. The area enjoys a temperate microclimate of coastal origin, influenced by sirocco winds and characterised by periods of drought and rare frosts. The vines, trained using the Guyot system, sink their roots into predominantly sandy soils, shallow and with good water retention capacity. These pedoclimatic conditions favour the balance of the plant, allowing the development of a clear aromatic profile that blends Mediterranean character with vibrant liveliness.
How it is produced
After the late August harvest, the destemmed grapes undergo a brief cold maceration on the skins, an essential stage to extract the full aromatic potential of the variety before pressing. Fermentation takes place in steel tanks for about two weeks. To preserve the integrity and fragrance of the varietal bouquet, vinification concludes with a five-month maturation in steel. This meticulous process preserves the natural acidic drive, resulting in a wine of great elegance and linearity.
History and Curiosities
Founded in 1962 by nineteen winegrowers, Cantine San Marzano today represents a family of over 1,200 members in the heart of the Manduria region. Expertly combining modern technologies with the centuries-old local wine-making tradition, the winery enhances the vineyards cultivated using the Guyot method on the typical sandy soils of Salento. From this deep respect for the land, crowned by the late August harvest, Timo Vermentino 2025 is born: a white wine of excellent quality, awarded 96 points by Luca Maroni, ideal for savouring the authentic elegance of Apulia.

Nowadays the fusion of time honoured tradition, passion and sensibility with contemporary techniques enables us to produce wines with distinctive varietal and regional characters, marvellously reflecting individual attention, seasonal variation and local terroir.
