San Marzano Metodo Classico Calce Rosè Brut is a sparkling wine from Apulia, born from the union of Chardonnay and Negroamaro. Produced according to the Traditional Method, it presents an elegant pale pink colour with onion skin reflections and a fine, persistent perlage. On the nose, the bouquet combines lively citrus freshness with floral notes, small red fruits and delicate hints of bread crust. On the palate, it is dynamic, with a softness that envelops its decisive structure in perfect balance. It is ideal paired with seafood and shellfish first courses.
Where does it come from
This sparkling wine originates from selected hillside vineyards in Apulia, cultivated using the espalier system. The vines sink their roots into medium-textured clay-limestone soils, which are shallow and characterised by a significant presence of stones. This particular soil composition gives the grapes remarkable aromatic precision and a consistently pleasant taste. The regional climate and terrain create the perfect environment to enhance Chardonnay and Negroamaro, resulting in a distinctive and harmonious blend.
How is it produced
Harvesting takes place between August and September. In the winery, the whole grapes are gently pressed to extract the purest free-run must, which is then fermented at low temperatures. The prise de mousse strictly follows the rules of the Traditional Method, followed by a long ageing on the lees for over 36 months. This technical phase is essential to give complexity to the structure, refine the perlage and enhance the clear citrus freshness that defines the character of the wine.
