Description
What kind of wine it is
Vin San Giusto from San Giusto a Rentennano is a sweet white wine that fully expresses the identity of Tuscany. It is created from a careful blend of Malvasia and Trebbiano grapes, subjected to a lengthy drying process. In the glass, it reveals a sweet and deeply concentrated profile, supported by a broad structure and remarkable persistence on the palate. Its rich and complex style, the result of slow oxidative ageing, makes it particularly suited to long ageing over time, ideal for ending meals with elegance.
Where it comes from
This nectar originates in Tuscany, within the San Giusto a Rentennano estate. Its identity is closely linked to the region's tradition for producing sweet wines. The ageing process is unique and takes place in sealed barrels located in the attics. In this environment, the natural seasonal temperature fluctuations encourage a slow and precious concentration of aromas. The cycle concludes with a measured rest in the estate cellars, which defines and stabilises its authentic character.
How it is produced
The Malvasia and Trebbiano grapes are hand-picked at perfect ripeness and destined for a natural drying of about one hundred and twenty days in well-ventilated rooms. The resulting must rests for six years in small oak and chestnut barrels, undergoing a slow fermentation. During this phase, natural evaporation reduces the volume, ensuring a final yield that concentrates flavours and aromas. This is followed by meticulous drop-by-drop filtration through Dutch cloth and a further eighteen months of ageing. Served at a temperature of ten degrees, this dense sweet wine creates a magnificent taste contrast when paired with mature and blue cheeses.
History and Curiosities
Vin San Giusto 2018 from Fattoria San Giusto a Rentennano is a fine organic Tuscan dessert wine, made from hand-picked Malvasia and Trebbiano grapes. After a natural drying process lasting 120 days, the wine matures for six years in small oak and chestnut barrels exposed to the temperature fluctuations of the attic. This ageing, combined with slow filtration through Dutch cloths and 18 months of rest in the bottle, concentrates its aromas, offering an intense natural sweetness without added sulphites, making it excellent for enhancing mature and blue cheeses.
