What kind of wine it is
Giallo d’Arles is a white wine by Quintodecimo, created by the intuition of oenologist Luigi Moio to enhance the potential of Greco di Tufo. With a crystalline golden colour, it reveals a bouquet of gardenia, white melon, apricot and Annurca apple, enriched by hints of dried fruit and white pepper. On the palate, it expresses an enveloping structure and a profound minerality that blends with a vibrant freshness. The sip develops harmoniously, finishing with captivating smoky notes. Its remarkable longevity allows it to acquire even greater complexity over time.
Where it comes from
The Greco di Tufo grapes come from Mirabella Eclano, in the heart of Campania. The vineyards, trained on a vertical trellis with Guyot pruning, benefit from a south-west exposure at 520 metres above sea level. The clay soil is fundamental in giving the wine breadth of flavour and long persistence. These conditions favour a progressive ripening of the bunches, balancing the aromatic richness of the grape variety with a distinct territorial character, offering a flavour profile that is always taut and balanced.
How it is produced
Manual harvesting is followed by a rigorous selection of the bunches. After gentle pressing and static decantation, controlled fermentation takes place between steel and small French oak barrels. The vinification does not include fining in order to preserve the pure expression of the grape variety. This meticulous process gives an elegance that makes it the ideal pairing for langoustines on chickpea cream, flavourful first courses and both oily and lean fish. The excellent flavour balance ensures great persistence even when paired with cheese selections.
