What kind of wine is it
Terebinto Grillo is an organic white wine from Planeta, representing Menfi in Sicily. Made from Grillo grapes, it displays a pale yellow colour with greenish highlights. The nose reveals clear notes of apricot, loquat, pink grapefruit and beeswax. On the palate, it is fresh and vibrant, characterised by a lively acidity and a distinct mineral imprint, offering a structured and elegantly complex sip.
Where does it come from
The grapes grow in the districts of Dispensa, Gurra and Monte Cirami, at around seventy-five metres above sea level. The Guyot-trained vineyards rest on a calcareous and clayey matrix. The variability of the soils, from the loose earth of Monte Cirami to the deep soils of Gurra, gives the bunches a precise aromatic character. Careful controlled yields ensure optimal ripening, essential for defining a deep and territorial flavour profile.
How is it produced
The manual harvest takes place in September. After destemming and gentle pressing, the must ferments in stainless steel tanks, without the use of barrels to preserve the varietal integrity. This is followed by ageing on fine lees for four to six months. During this stage, periodic bâtonnage keeps the yeasts in suspension, giving the wine greater breadth and an enveloping texture on the palate.
