Its golden, luminous appearance is crossed by fine and persistent bubbles, which precede a fresh and vibrant aromatic profile. The bouquet reveals notes of lemon and yellow grapefruit, followed by hints of white-fleshed pear. On the palate, it offers a broad and creamy attack, perfectly balanced by a persistent finish characterised by the freshness of citrus peel.

Where it comes from

The grapes for this wine come from Baroville, in the heart of the Côte des Bar, the southernmost area of the Champagne region. Here, the Philippe Fourrier estate, a family-run business dedicated to viticulture since 1847, operates with great care. The deep connection to the land allows for authentic production, capable of enhancing the natural elegance of Chardonnay. This specific subzone gives the sparkling wine a balanced structure and a pleasant roundness on the palate, the result of a unique and highly suitable terroir.

How it is produced

After the secondary fermentation, the wine matures with ageing on the lees for four or five years. This prolonged rest enriches the aromatic profile, integrating the fresh fruity aromas with a refined biscuity nuance. The slow maturation process imparts greater structural complexity and an extremely fine perlage. Ideally served between 6 and 8°C, it is an excellent aperitif. At the table, it pairs beautifully with shellfish, seafood dishes, delicate white meats or medium-aged cheeses.
