How it is produced
Production, which strictly follows the Traditional Method, begins with vinification designed to extract the colour of Pinot Noir and the elegance that distinguishes Chardonnay. The prise de mousse in the bottle initiates the long ageing on the lees, which lasts for at least twenty-four months. This slow maturation allows the development of an enveloping and well-defined flavour profile. The result is a Brut dosage with inviting and measured acidity, ideal for accompanying starters and flavourful fish dishes.
