What kind of wine it is

Mai Dire Mai Fear No Dark by Pasqua is an enveloping red blend from Veneto, made from Cabernet Sauvignon and Oseleta grapes. On the palate, it is dry, characterised by soft and silky tannins that provide a dry and structured sip. The bouquet opens with notes of small black fruits and hints of medicinal herbs, accompanied by balsamic nuances and a touch of undergrowth. The finish is long, enriched with hints of strawberry and currant. Its remarkable balance of flavour makes it the ideal companion for roast red meats, flavourful risottos and mature cheeses.

Where it comes from

This wine originates from the Montevegro vineyard in Val d’Illasi, situated on a hill at 350 metres above sea level. It is a single plot located in the most secluded area of the estate, enjoying a privileged north-east exposure. The microclimate ensures a cool and shaded environment, constantly refreshed by breezes from the Lessini mountains. The soil composition, rich in basalt and limestone, gives the grapes a deep mineral character, lending the wine a taut style and a clear sense of place.

How it is produced

Production begins with a rigorous manual harvest, followed by gentle pressing of the bunches. Fermentation takes place at a controlled temperature and is accompanied by maceration on the skins for about twenty days, essential for extracting the right colour and phenolic components. After malolactic fermentation in steel tanks, the wine matures for sixteen months in new French oak barrels. This ageing shapes the entire structure, ensuring an elegant finish in the glass and marked longevity.
