How it is produced
The grapes are harvested in September and undergo a gentle cold maceration to encourage the extraction of primary aromas without weighing down the structure. Fermentation takes place in steel tanks at a controlled temperature of 12°C, thus preserving the fragrance of the original fruit. The wine then rests with a two-month lees ageing, an essential step that imparts a pleasant tactile softness. Served chilled, it pairs beautifully with classic fresh pasta dishes, grilled lean fish and soft cheeses.
