From an aromatic perspective, defined notes of blackberry, raspberry, and black cherry emerge, enriched by delicate vanilla nuances. This red pairs harmoniously with roast meats, game dishes, and mature cheeses.
Where it comes from
It originates in Monforte d’Alba, in the heart of the famous Barbera d’Alba area in Piedmont. The vines grow at an altitude of 370 metres with a favourable south-facing exposure, ensuring excellent ripening. The terroir is distinguished by marly sandstone soil, which is fundamental for providing structure and a decisive acidic backbone. Parusso cultivates these plots by strictly applying biodynamic viticulture, so as to provide a faithful reflection of the ecosystem and the deep bond with the land of origin.
How it is produced
The process begins with scrupulous hand-harvesting to preserve the integrity of the bunches. This is followed by soft pressing and a long maceration on the skins, aimed at extracting colour and phenolic components. Alcoholic fermentation starts spontaneously through the exclusive action of indigenous yeasts. Resting for at least four months in small oak barrels, in contact with the lees, enriches the palate, defining the taste texture and complex aromatic precision.
