What type of wine it is

The Vermentino Stellato by Pala is a still white wine with a controlled designation of origin that captures the essence of Sardinia through Vermentino grapes, vinified in stainless steel. An expression of Vermentino di Sardegna, it presents a full and concentrated style, supported by a distinct freshness and a clear savoury imprint. The intense aromatic profile unfolds with clear floral hints and unmistakable notes of Mediterranean scrub, which intertwine with nuances of Golden Delicious apple, pear, and citrus. On the palate, it is creamy and harmonious, leading the sip towards a long, savoury finish that makes it an ideal companion for shellfish and pasta dishes with delicate flavours.

Where it comes from

The grapes come from old-vine vineyards located in the Serdiana area, distributed across the localities of Tanca S’Arai, Benatzu Coloru, and Is Crabilis. The rows grow on hillsides at an altitude of about one hundred and eighty metres, cultivated using the low espalier system. The roots sink into sandy and clay-limestone soils, characterised by an abundant presence of stony fragments. This earthy matrix enriches the glass with a marked mineral sensation and a notable expressive clarity, thanks to balanced yields that favour excellent aromatic concentration.

How it is produced

In the cellar, the carefully selected Vermentino grapes undergo soft pressing. Alcoholic fermentation takes place in temperature-controlled stainless steel tanks, thus preserving the integrity and fragrance of the fruit. Subsequently, the wine matures through a prolonged period on the fine lees for three months, excluding any time in barrels. This winemaking technique is essential to give the wine a fine silky texture and an enveloping structure, well-balanced by a juicy acidity that lengthens its taste persistence.
