What kind of wine it is
Olivier Leflaive Bourgogne Les Setilles is an elegant still white wine from the prestigious Burgundy region. Made exclusively from Chardonnay, it displays a bright straw yellow colour. The aromatic profile releases hints of white flowers, peach, green apple and lime, accompanied by mineral notes and toasted almond. On the palate, this structured white wine is warm, full and vibrant, with a persistent finish. Its versatility makes it an ideal gastronomic pairing to accompany goat's cheese, white meats, fish and dishes enriched with butter.
Where it comes from
This cuvée takes its name from the location of the Olivier Leflaive winery. It is created from a careful blend of plots situated in the renowned wine-growing villages of Puligny-Montrachet and Meursault. The vineyards are located at around 250 metres above sea level on clay-limestone soils, which impart a distinct mineral character to the wine. Through the use of estate-owned vines and grapes selected under strict agronomic control, Olivier Leflaive obtains high-quality raw material that faithfully reflects the expression of the region's terroir.
How it is produced
After a harvest carried out largely by hand, the grapes undergo a gentle pneumatic pressing to extract a clear must. Ageing lasts fifteen months and takes place both in stainless steel tanks and in oak barrels, some of which are new. This specific vinification technique allows the freshness preserved by the steel to be integrated with the aromatic roundness conferred by the wood, ensuring excellent balance on the palate and an interesting potential for evolution.

Just after the First World War, Olivier’s grandfather, Joseph Leflaive was faced with the failure of his steel factory in Saint-Etienne.
His investments in Burgundy were all he had left and he decided to enlarge his wine estate. It became a family-run operation covering some 35 hectares. His son, Joseph Régis, was in insurance and along with his brother Vincent, decided to take over the reins in 1953.
The estate soon began producing top-flight wines, mainly due to the arrival of air conditioning in Puligny in the 1970s. This was a major step for winemakers in this village which sits two meters above the water table and as such, had no underground cellars. Read more
