Ronchi Sparsi di Mutiliana is a still red wine made from Sangiovese grapes, an authentic expression of Romagna Sangiovese Modigliana. In the glass, it displays a bright ruby red colour. Where does it come from
This Sangiovese originates from the landscapes of the Romagna Apennines, from vineyards spread across the three valleys of Acerata, Tramazzo and Ibola. The vines cover an area of twelve hectares, climbing from the slopes of Modigliana towards the mountain altitudes. This specific hillside origin profoundly influences the character of the wine, giving it a pronounced freshness on the palate and measured tannins. The Mutiliana estate is an integral part of the Stella dell’Appennino association, a project dedicated to protecting the territory and enhancing local viticulture. From these plots comes a limited production.
How is it produced
The creation of Ronchi Sparsi begins with a meticulous selection of Sangiovese grapes, overseen by oenologist Francesco Bordini. The vinification process involves fermentation with long macerations on the skins, an essential step to extract structure and colour while preserving natural smoothness. Ageing takes place exclusively in concrete, a technical choice aimed at maintaining aromatic precision and the typical fragrance of the grape variety. To appreciate every nuance of this red, it is recommended to decant for one hour and serve at an optimal temperature between fourteen and sixteen degrees.
