Where it comes from
This white wine comes from mid-hill vineyards, situated at around three hundred metres above sea level with a favourable south-east exposure. The vines grow on clay soils, which are essential for imparting consistency and depth of flavour. The Marchesi Migliorati winery is committed to the restoration of abandoned vineyards, enhancing plots with high potential to create limited and carefully crafted productions. The espalier training system ensures optimal ripening of the Pecorino grapes, faithfully reflecting the character of the region.
How it is produced
Vinification involves fermentation in stainless steel tanks for about ten days, carried out to allow the natural evolution of the musts. The wine then matures in steel for at least three months, thus preserving the absolute clarity of its aromas and the precision of its flavour. Versatile and dynamic, it is ideal for accompanying fish dishes and shellfish. Thanks to its harmony, it also pairs perfectly with a selection of starters and cheeses.
