It is made from Sémillon grapes and other native varieties, meticulously crafted according to the Traditional Method to ensure a defined structure and superior quality. In the glass, it displays a straw yellow colour enlivened by a fine and persistent perlage. On the nose, it offers clear aromas of white fruits and citrus nuances, leading to a crisp and clean palate. Thanks to its balanced profile, it is the ideal choice to accompany and enhance seafood starters, shellfish, and selections of delicate cheeses.

Where it comes from

The grapes, strictly hand-picked, come from the vineyards of Entre-Deux-Mers, in the renowned Bordeaux region. The authentic character of this wine takes shape in Saint-Émilion, within historic underground cellars dug twenty metres deep. Here, in total darkness and at a constantly maintained temperature of twelve degrees, the environment ensures undisturbed ageing. Such stable climatic conditions are essential to preserve the aromatic integrity and freshness of flavour that distinguish the expression of this sparkling wine.

How it is produced

The rigorous production process is based on a slow prise de mousse in the bottle, as required by the Traditional Method. The wine undergoes a careful twelve-month maturation on the lees, gradually enriching its sensory profile. This patient evolution phase encourages a refermentation capable of generating a light, persistent, and enveloping mousse. Every technical step aims to enhance the intrinsic liveliness of the fruit, delivering a vibrant palate and a clean finish that pleasantly prolongs the citrusy aftertaste.

The Cordeliers Cloister site is famous for its underground tunnels that were excavated for the stone used to build Saint-émilion and some parts of Bordeaux. They are 3km long and run beneath the Saint-émilion citadel and some of its major vineyards. They are 20m underground, have a constant temperature of 12° throughout the year and are totally dark, making them perfect for ageing the wines we have been making since 1892 using traditional methods.
