Description
What kind of wine it is
Chianti Classico Gran Selezione Elle is an organic red wine made exclusively from Sangiovese grapes. The vinification takes place in cement vats at a controlled temperature, enhanced by a submerged cap maceration that ensures optimal extraction. The subsequent malolactic fermentation, also carried out in cement, preserves its aromatic integrity. This Chianti Classico displays a structured profile, with a well-defined and deep tannic texture. The process is completed with ageing in used barrels and a long period of rest, resulting in a precise and elegant sip.
Where it comes from
The grapes are sourced from the finest plots in Lamole, at the heart of the Chianti Classico region. The Istine vineyards, located at high altitude and facing west, benefit from an ideal climate for slow and balanced ripening. The soil, characterised by the Macigno del Chianti, has a sandy texture that ensures excellent drainage, giving the wine tension and finesse. Careful parcel vinification and a respectful approach to the ecosystem enhance the unique pedoclimatic features, guaranteeing an authentic and well-defined territorial identity.
How it is produced
After a meticulous manual harvest, the must ferments at a controlled temperature for twenty days. This is followed by a long period on the skins in cement vats, a material also chosen for the malolactic phase to ensure measured extraction. Maturation continues with ageing in used barrels, which integrates the structural components without masking the Sangiovese’s expression. A crucial rest in glass completes the process, creating a perfect balance ideal for pairing with roasts, game and mature cheeses.
