Pecorello by Ippolito 1845 is a still white wine with a distinctly Mediterranean character. Made from Pecorello grapes, it displays a bright straw yellow colour. The bouquet is complex and elegant, with notes of citrus, yellow-fleshed fruit, white flowers, tropical nuances and a subtle mineral hint. On the palate, it is vibrant and harmonious, driven by lively, smooth acidity. Characterised by a persistent finish, it pairs perfectly with shellfish, seafood risottos and vegetarian dishes.

Where it comes from

This wine is produced in Cirò Marina, in the heart of the Ionian region, expressing the identity of Calabria. The Ippolito 1845 winery has a long-standing commitment to promoting native grape varieties. The use of Pecorello, an ancient local variety, highlights the vocation of the coastal environment, where sea breezes influence the expressive character of the vine. How it is produced

Production begins in September with a rigorous manual harvest. The must undergoes static cold settling, followed by fermentation in stainless steel at a controlled temperature to preserve the integrity of the aromas. Ageing takes place entirely in steel until the end of January, ensuring a balanced evolution that enhances the freshness and clarity on the palate, preserving the primary characteristics of the original grapes.

It was in 1845 when Vincenzo Ippolito embellished his initials on the country house in the Cirò marina between vineyards, olive groves and orange trees. In a very varied agriculture, the vines begin to play an important role, although the wine consumption was strictly local. With more than 160 years of history, Ippolito Winery is the oldest winery in Calabria. Located in the historic center of Cirò Marina, the heart of Calabrian viticulture, the farm includes an estate of over 100 hectares, distributed between gentle hills and sunny plains close to the Ionian Sea, located in the classical Cirò area. The corporate mission has always been the recovery and valorisation of native grape varieties such as Gaglioppo, White Greek, Calabrian and lastly the Sheep. Through constant research, the use of innovative techniques, direct control of all production processes, we seek in our wines elegance, exclusivity and identity with their own territory.
