Description
What kind of wine it is
Niccolaio by Grillesino presents an intense ruby red colour with violet reflections. On the nose, it reveals notes of ripe red fruits, wildflowers, chocolate, caramel and vanilla. On the palate, it is refined and structured, supported by good acidity and soft tannins. This Cabernet Sauvignon boasts excellent ageing potential and pairs ideally with roast meats, game and mature cheeses.
Where it comes from
The identity of this wine is born in Magliano in Toscana, in the heart of the Maremma Toscana, in the province of Grosseto. The Grillesino estate enhances the unique soil and climate characteristics of this coastal area, where the favourable microclimate allows the grapes to reach perfect ripeness. This connection to the land gives the wine an authentic soul and remarkable ageing potential.
How it is produced
Production begins with the manual harvest of the Cabernet Sauvignon grapes, followed by destemming. The must undergoes cold maceration and then ferments in stainless steel tanks at a controlled temperature. The wine is then aged for eleven months in French oak barrels, a fundamental step to harmonise the structure and enrich the complexity of the aromatic profile.
History and Curiosities
Founded in 1999 in Magliano, the Grillesino winery produces this elegant single-varietal Cabernet Sauvignon, which expresses the authentic terroir of the Maremma. The grapes, hand-picked, undergo meticulous vinification and 11 months of ageing in French oak. The result is a Maremma Toscana DOC with a refined and complex palate, featuring soft tannins and intense aromas of red fruits, chocolate and vanilla. An extraordinary wine, ideal for enhancing roast meats and game dishes, and capable of evolving magnificently in the cellar for over a decade.
