What kind of wine it is
Vola Vola Viognier by Fina is a still white wine with a Mediterranean character, produced in the Sicilian lands. Its aromatic profile is dominated by intense notes of apricot and peach, followed by hints of tropical fruit, citrus, aromatic herbs and jasmine. On the palate, it stands out for its elegant fresh and savoury quality and pronounced minerality, which blend into a long, broad and slightly honeyed finish. In the glass, it is perfect as an aperitif and pairs beautifully with sushi and sashimi, flavourful seafood risottos, white meats and delicate goat's cheeses.
Where it comes from
The grapes are grown in the Marsala area, in western Sicily. The vineyards, cultivated organically, are located six hundred metres above sea level in a hilly setting characterised by a Mediterranean climate. The vines benefit from excellent sun exposure and constant sea breezes, taking root in volcanic soils rich in minerals. The Viognier vines are trained on a trellis with Guyot pruning, a method that ensures perfect canopy balance and gives the wine its unmistakable saline drive, a true reflection of this renowned Sicilian terroir.
How it is produced
Fina's production process begins at the end of August with a rigorous selective manual harvest. The bunches are gently pressed to delicately extract the must. Fermentation takes place in stainless steel tanks at a controlled temperature to preserve the integrity of the primary aromas. This is followed by a period of ageing on fine lees, also in steel, where the wine gains greater structural depth. The process concludes with bottle maturation lasting six months, an essential step to harmonise all the components and give the wine great smoothness on the palate.
