What kind of wine it is
Fina Kebrilla Grillo is an organic white wine that best expresses the essence of Grillo grapes grown in Sicily. On the nose, it reveals a floral and fruity bouquet, where elegant notes of orange blossom and green apple blend harmoniously with citrus hints. The palate is characterised by a distinct savouriness and a deep mineral vein, perfectly balanced by a lively freshness. The sip is smooth and refined, with a long and clean finish. At the table, it pairs beautifully with seafood first courses, shellfish, lean fish and dishes based on mature cheeses.
Where it comes from
The grapes come from western Sicily, from coastal vineyards located opposite the island of Mozia. This proximity to the sea, combined with an altitude between one hundred and fifty and four hundred and fifty metres, defines the wine's identity, giving it a pronounced maritime character. The constant sea breezes moderate the temperatures, helping to preserve the freshness of the grapes and to shape a precise aromatic profile. The particular microclimate of this area gives the Grillo a natural saline concentration, encouraging the development of particularly bright fruity and floral expressions.
How it is produced
The Grillo grape harvest takes place towards the end of August, when the bunches reach the perfect aromatic balance. In the winery, temperature-controlled fermentation takes place separately: part in stainless steel tanks and a small fraction in barrels. This approach continues during maturation, allowing for a clear olfactory definition combined with greater structural complexity. The process ends with a careful final refinement, aimed at stabilising the vibrant freshness and harmonising the vegetal nuances with the pronounced savoury character.
