Description
What kind of wine it is
The Bourgogne Côte d’Or Chardonnay produced by Fabien Coche is a still white wine that elegantly enhances the finesse of Chardonnay. In the glass, it stands out for its straw yellow colour with bright golden highlights, while the bouquet reveals clear fruity and floral notes. On the palate, it is dry and lively, supported by a pleasant savouriness and a distinct freshness. This vibrancy makes it ideal for pairing with fish dishes, white meats and cheeses, and it also boasts excellent ageing potential if stored in the cellar.
Where it comes from
This expression of Chardonnay originates from the vineyards of Meursault, located in the heart of the prestigious Burgundy and the Côte d’Or. Fabien Coche’s agricultural approach focuses on respect for the soil and the surrounding ecosystem. Following the principles of organic farming, the vine grows in a healthy and balanced environment. This care helps preserve the natural vitality of the land, transferring those distinctive characteristics into the grapes, resulting in a sip that is always precise and elegant.
How it is produced
The winemaking process enhances the harvest through careful methods designed to maintain the quality of the raw material. A key technical choice by Fabien Coche is the absence of filtration at the end of the production cycle. This non-invasive approach ensures a pure and authentic profile, capable of expressing the wine’s structural complexity and the purest identity of the terroir.
