What kind of wine it is
The Classic Sauvignon by Erste+Neue is a still white wine that faithfully expresses the identity of the grape variety. Produced in the South Tyrol region, it presents a bright straw yellow colour, enhanced by elegant greenish highlights. On the nose, it offers a clear bouquet, characterised by elderflower notes, nettle, tomato leaf and hints of exotic fruit. On the palate, it is pleasantly fruity, supported by pronounced minerality and a vibrant acidity that define its great liveliness.
Where it comes from
The Sauvignon grapes grow in the picturesque mountain landscape of Caldaro, a prime area for quality viticulture. The temperate Alpine climate ensures optimal conditions, encouraging the aromatic development of the grapes and preserving their natural freshness. The vines take root in a gravelly porphyry soil, a geological component that gives the wine a strong mineral character and a distinct savouriness. Cultivated using pergola and Guyot systems, the vineyards benefit from a pedoclimatic context that enhances the grape variety's characteristics.
How it is produced
The winemaking process is aimed at protecting the fragrant primary aromas, avoiding oxidation of the must. Fermentation takes place at a controlled temperature in steel tanks, followed by ageing on fine lees for about four months. This process gives the wine structure and aromatic precision, while maintaining its freshness. Ideal to serve between 8 and 10 °C, it pairs perfectly with tasty starters, vegetarian dishes and, in particular, asparagus-based dishes.
