Description
What kind of wine it is
Puntay Sauvignon by Erste+Neue is an organic white wine made from Sauvignon grapes. Characterised by a pale straw yellow colour, it displays a clear and clean aromatic profile. On the nose, notes of elderflower, exotic fruits, currant and grapefruit stand out, enriched by hints of paprika. On the palate, it is a full-bodied and smooth wine with a fine texture. The lively acidity imparts freshness and leads to a persistent finish. It pairs perfectly with fish dishes, asparagus and goat's cheese, and also boasts excellent ageing potential.
Where it comes from
This wine originates in South Tyrol, in the area around Lake Caldaro. The vineyards are located on hillsides, between 400 and 550 metres above sea level, and are cultivated using the Guyot system. The temperate Alpine climate enhances the freshness of the grapes, ensuring impeccable balance. The gravelly soil, with a high limestone content, is essential for giving the wine verticality and remarkable persistence, fully highlighting the distinctive characteristics of its terroir.
How it is produced
Vinification begins with a cold maceration of the grapes for 12-24 hours, an ideal process for gently extracting the aromatic components. This is followed by a partially spontaneous fermentation, initiated with the use of indigenous yeasts. The wine completes its journey by maturing for seven months in large wooden barrels, a crucial stage for integrating the structure and achieving a velvety texture, resulting in a clean, harmonious and balanced sip.
